Ingredients
  

  • 1 8 oz round Brie cheese
  • Cooking spray
  • 1 sheet frozen puff pastry thawed
  • 1/2 cup cranberry sauce canned or homemade
  • 1/2 cup finely chopped walnuts
  • Sea salt to taste
  • Rosemary to garnish optional

Method
 

  1. Chill the Brie. Remove and discard the rind from the Brie cheese (or leave it on if you prefer). Place the cheese in the freezer for 20 minutes to make it easier to cut. This step is key for clean cuts!
  2. Prep the muffin pan. While the Brie chills, spray a 24-cup mini muffin pan generously with cooking spray. Set aside.
  3. Roll and cut the puff pastry. On a lightly floured surface, roll the puff pastry sheet out into a 10×14-inch rectangle. Cut the sheet lengthwise into 4 even strips, then crosswise into 6 even strips, making 24 squares total.
  4. Press into muffin cups. Separate the pastry squares and gently press each one into a prepared mini muffin cup. The corners will stick up—that’s perfect!
  5. Cut the Brie. Remove the chilled Brie from the freezer and cut it into 24 pieces, approximately 3/4-inch in size. Cold Brie cuts cleanly without sticking to the knife.
