Always a crowd favorite. These disappear at every party, brunch, and game day gathering.

Endlessly customizable. Change up the cheese or add spices for different flavor profiles.

Directions

Step 1
Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

Step 2
Roll the mixture into golf-ball-sized balls (about 1 to 1.5 inches in diameter). You should get about 30 sausage balls.

Step 3
Place them on the prepared baking sheet, spacing them about 1 inch apart.

Step 4
Bake in the preheated oven for 20 to 25 minutes, until the sausage balls are golden brown on the outside and the sausage is cooked through.

Tips for Success

Use room temperature sausage. This is KEY! Cold sausage won’t mix well with the other ingredients. Let it sit out for 30 minutes before starting.

Don’t skip the hand mixing. Your hands are the best tool for this job. The warmth from your hands helps bring the mixture together.

The mixture will seem dry at first. Keep mixing! The cheese and sausage fat will eventually bind everything together.

Make them uniform in size. This ensures even cooking. Use a small cookie scoop for perfectly sized balls every time.

Make ahead for stress-free entertaining. Roll the balls, refrigerate overnight, and bake fresh in the morning.

Freeze for later. Freeze unbaked sausage balls on a tray, then transfer to a freezer bag. Bake straight from frozen, adding 5 minutes to the bake time.

Storage & Reheating

Refrigerate: Store cooked sausage balls in an airtight container for up to 3 days.

Reheat: Reheat in a 350°F oven for 8-10 minutes until warmed through, or microwave for 30-60 seconds.

Freeze (unbaked): Freeze unbaked sausage balls on a tray, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 5 minutes to the bake time.

Freeze (cooked): Freeze cooked sausage balls for up to 1 month. Reheat from frozen in a 350°F oven for 12-15 minutes.

Ingredients

  • 1 pound ground pork sausage at room temperature
  • 2 cups biscuit baking mix like Bisquick
  • 12 ounces sharp Cheddar cheese shredded (about 3 cups)

Method

  1. Preheat the oven. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Combine the ingredients. In a large bowl, combine the room temperature sausage, biscuit baking mix, and shredded Cheddar cheese. Mix with your hands until everything is well combined and evenly distributed. The mixture will seem dry at first—keep mixing! It will come together into a cohesive dough.
  3. Roll into balls. Roll the mixture into golf-ball-sized balls (about 1 to 1.5 inches in diameter). You should get about 30 sausage balls. Place them on the prepared baking sheet, spacing them about 1 inch apart.
  4. Bake until golden. Bake in the preheated oven for 20 to 25 minutes, until the sausage balls are golden brown on the outside and the sausage is cooked through. An instant-read thermometer should read 160°F (71°C) when inserted into the center.
