Preheat the oven. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Combine the ingredients. In a large bowl, combine the room temperature sausage, biscuit baking mix, and shredded Cheddar cheese. Mix with your hands until everything is well combined and evenly distributed. The mixture will seem dry at first—keep mixing! It will come together into a cohesive dough.
Roll into balls. Roll the mixture into golf-ball-sized balls (about 1 to 1.5 inches in diameter). You should get about 30 sausage balls. Place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake until golden. Bake in the preheated oven for 20 to 25 minutes, until the sausage balls are golden brown on the outside and the sausage is cooked through. An instant-read thermometer should read 160°F (71°C) when inserted into the center.
Serve warm. Let the sausage balls cool for 5 minutes on the baking sheet, then transfer to a serving platter. Serve warm with your favorite dipping sauces!
